Salty, Melty Steak

Oh my jeez, tonight I think I made the best steak ever. I was surfing this morning and came across this post about how to turn choice steaks into prime steaks. Basically it is a way to brine beef, using only salt. Take some steaks, cover them with salt, and let them rest for an hour. Then wash off the salt and pat dry. Sounded promising, so I picked up a pound of New York Strip at the Whole Foods today and did the salt thing. While it was curing I whipped up a better version of the garlic herb butter, sauteing the garlic in a tablespoon of butter, then creaming it in the food processor with rosemary and lemon juice and salt. After rinsing off the steak I grilled it over hard-wood charcoal, let it rest and gave it the butter. Rosemary potatoes on the side. And it did taste like filet mignon. The beef was just buttery soft, and the flavor from the smoke and the butter was incredible. Washed down with a glass of old vine zinfandel whilst watching The Venture Brothers, and I had a truly memorable meal.
